Preparation Instructions:
- Place frozen, unopened bag of J.T.M. Fiesta Scramble in a steamer, tilt skillet or stock pot with boiling water, and heat for approximately 45 minutes or until product reaches 145°F (HACCP Critical Control Point)
- Remove from steamer, kettle, tilt skillet or stock pot, and place unopened bag into holding cabinet (145°F or higher HACCP) until ready to use.
- Remove Fiesta Scramble from hot holding cabinet, carefully cut open bags, and pour into two half pans or four third pans.
Assemble:
- Portion 1 oz (by weight) .75 cup of tortilla chips in bowl or a serving tray.
- Portion 3.78 oz. (by weight) #8 scoop or 1/2 cup of Fiesta Scramble around tortilla chips.
- Garnish with 1/2 oz. of Salsa, and 1/4 oz. of shredded cheddar cheese and jalapeno slices.
